Yes, we do not allways gut the animal in the field. If recovery time is going to be several hours then we will bleed and gut the animal in the field. Also if recovery is difficult, then we will gut to reduce weight.
We tend to gut in the abbatoir, where it is cleaner and less grass and dirt gets onto the carcass.
But it is not a hard and fast rule.
